The Bianca series is where we fully explore the tart flavour spectrum and what a lactose infused sour beer can be. In the Peach rendition, we have worked together with our beloved friend Chad Yakobsen at Crooked Stave, an actual doctor of brett, to find just the right tart, funky and earthy flavour profile to balance peaches and raspberries. The peaches used for this rendition come from Palisade on the western slope of the Colorado Rockies.
