Thorn Brewingがあるサンディエゴはメキシコとの国境のすぐそば。古くから人が国境を越えて行き来し、互いの文化が色濃く交じり合うエリアです。そのメキシコにはテパチェという伝統的な発酵飲料があり、パイナップル果汁、ピロンシジョという黒糖、そして数種類のスパイスが入った液体を発酵させますが、それをインスパイアしたのがこのビール。
テパチェ同様パイナップルを使い、オリジナルなアレンジとしてシナモンやクローブを加えています。
軽やかな酸味とフルーティーな甘み、そして複雑なスパイスが感じられるサワーエールに仕上がっています。
