Dance Language is a bière de miel brewed and bottle conditioned with single source honey varietals. The four varietals highlighted in this pack are:

Maine Blueberry Honey – Sourced from Swan’s Honey in Albion, Maine, this is one of our favorite varietals that is derived from nectar of the wild blueberry fields of Downeast Maine. Gold in color with notes of dark berries, orange marmalade, bread dough, and white flowers with a dry, effervescent, and mineral finish.

Japanese Knotweed – Sourced from New York state, this invasive weed is also found in 39/50 states where the flowers on these bamboo plants serve as a backup source for bees at times of the year when little else is flowering. We used this honey in its raw, unfiltered form which contains the pollen, propolis, and beeswax from the hives. Deep gold in color with notes of bittersweet dark chocolate, eucalyptus, menthol, and dark fruit with a dry, effervescent, and full finish.

Black Button Sage – Sourced from the coastal fields of Southern California, black button sage is an evergreen shrub with purple flowerets that is part of the salvia genus and serves as a reliable nectar source for honeybees from February through June. Gold in color with herbaceous notes of rosemary, anise, black pepper, and earth with a dry and effervescent finish.

Northwestern Meadowfoam – Sourced from central Oregon, this honey comes from the white and yellow blossoms of the small flower that covers the coastal valleys and mountains of the state. Gold in color with notes of cotton-candy, papaya, white pepper, and dried apricot with a dry, effervescent, and bright finish.
